The bohr effect seems to be connected to a property of the haemoglobin molecule, where its afinity to oxygen is modulated by the pH of the surrounding medium. This is convenient because it provides the mechanism for blood to pick up oxygen in the lungs and deposit it in tissue where it is needed. Oxygen is deposited in tissues where the pH has been depressed by the production of CO2. The CO2 having been produced by respiration in those tissues. "Hydrostatic pressure" is more general. "Hydro" implies water, "static" implies some equilibrium state, or at least a situation not incuding movement, and pressure implies a force per unit area. In the context of the first question I'd guess that the fluid in question is probably blood, and the pressure is being exerted by a heart. I'd need more details to proceed further.
